Peachy Casserole



Giving my favorite almost fall dish an ice bath.
Yep, that's sweet potato, Yukon golds, onion, butternut squash, tomatoes, green peppers, corn and peaches.
I've been making this forever, it's second only to my beloved French Onion Soup….

Whenever your making soups especially its a good idea to cool them down before you put them in the fridge to avoid that forsaken "temperature danger zone" of 41 F to 140 http://www.drmirkin.com/goodfood/main_dishes7.html

Enjoying a beet burger on top of a bed of arugula with pine nuts and a pumpkin seed sauce that is totally incredible...Really.
That's a kale salad with a bunch of other goodies you see on the side. LOVE IT!!
